organic corn, beet, & mint citrus quinoa


Anyone here beet lovers??? I am new to this lovely root, and I just ADORE 'em! 
At first, I'd only have them in my juices, but I never REALLLY got a taste of them
Until I had them in a salad one night, && became inspired :)

I decided to try it in quinoa and it came out great!

I never really measure anything so I don't have exact measurements 
BUT here are the ingredients

organic: 
quinoa
corn
roasted beets
mint leaves-chopped
orange zest
splash of OJ
fresh grated ginger root 
salt
pepper

gluten & dairy free chicken picatta



HEY guys!!! its been ages, i know. it's been crazy around here, but i am back and have some recipes for you!!


this was my first time "dredging" anything...i actually had to look up what it meant. i know. but, now that i am informed i am able to pass on this lovely recipe :)


what you need

2 boneless skinless chicken breasts, butterflied and then cut in half

sea salt & freshly ground black pepper
all-purpose GLUTEN FREE flour, for dredging
4 tablespoons unsalted non-dairy butter
3 tablespoons organic extra virgin coconut oil
1/3 cup fresh lemon juice 
1/2 cup low sodium chicken stock
1/4 cup capers, rinsed
1/3 cup fresh parsley, chopped

step one

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess KEEP IT LIGHT.

step two

In a large skillet over medium high heat, melt 2 tablespoons of non-dairy butter with 3 tablespoons coconut oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.


This came out sooo GOOD!

i am pretty stoked that we got around to doing this!
i just never felt right picking up a pre-made pizza crust to prepare 
pizza at home

just another opportunity to cook together :))


GLUTEN FREE ALL PURPOSE PIZZA CRUST


Contributed by: Bob's Red Mill Natural Foods
Gluten Free Pizza Crust.
1 tsp Sugar
3/4 cup Warm Water
1 Egg*
1 Tb Olive Oil
2 tsp XANTHAN GUM
1/2 tsp SEA SALT

Directions

Step 1

Combine yeast, sugar and water in a large bowl and let stand about 5 minutes.

Step 2

Combine dry ingredients in separate bowl. Add egg and oil to wet ingredients, then add dry ingredients. Mix with a hand mixer for a minute, adding a teaspoon of water if dough moves up beaters.

Step 3

Scoop onto greased pizza sheet. Wet your hands with water and spread dough over sheet and smooth. For a thicker crust, let rise for 10 - 15 minutes. Otherwise, continue with the baking directions below.

Step 4

Cover with favorite sauce and toppings. Bake at 425°F for 15-20 minutes.

pizza sauce
mozzarella cheese
green peppers
onions
tomatoes
mushrooms
garlic
basil
salami
TOPPED it off with pecorino remano cheese 



Perfection!

Grey's Anatomy--stalking houses--yard=sanity

happy humpity hump day y'all!!


so lately i've been avoiding the outside world, be it blogging, Facebook, cable...
to watch Grey's Anatomy on hulu
i'm probably the only person to opt out of watching the presidential debate last night
 to watch GA instead

you can say i'm obsessed...
i'm on season 6 now, i started at 2, two weeks ago...
so, if i want to get any studying done i must leave the house
otherwise xbox is screaming at me to turn it on



also, i've been stalking houses in Delray Beach on the internet and drive by's 
NOT in a crazy-lady way, but to look for rentals

AND i found this perfect house---i just feel the NEED to share because i'm so excited!









cute right!?!?


the yard is the most precious thing about this house
THIS yard is directly proportional to the survival of my sanity
THIS yard will be the stomping grounds for the pups

which means that our curtains and couch and other furniture will no longer be subject to the abuse

THANK THE LORD!

i am praying that this house will be ours, especially considering it is, as far as i'm concerned

cap it off

derek has been saving bottle caps for months 
we have this big ol cup full of em, we were saving them for a project
we just didn't know what project.

so a few weeks ago, as i was browsing, i came across Bailey's  bottle cap magnet project

all you need:

mod podge
magnets
bottle caps



so i grabbed some mod podge and magnets and got to work




i decided i really liked the dents in the caps so i kept them all just as they were



i couldn't find the magnets that have a stickey side like in Baily's project
so i just placed the magnets in the caps and poured the mod podge around it
after it dries there will be some holes
so just pour some more mod podge to fill the spaces
let dry
and voila


i just love them!!

favorite things {i should be studying}

happy friday!!!!

okay....writing friday just made me hungry for some delicious sweet potato fries. with honey mustard. 
weird.

anywho! can you believe that its the end of September already?? time's a-flyin!

ok i should be studying right now, but i feel like poo. so i'm going to lay in bed and wait for derek to come home, bearing food. hopefully sweet potato fries.

my favorite things this month

1. anniversaries

ours in particular. September 9th was our one year wedding anniversary, it was so great! it's an excuse to have a fancy dinner--and act like weirdos.


1. roasted chicken

i made a roasted chicken on monday. it was awesome. i made it like i would make a thanksgiving turkey & it smelled so good!

what's great about it is that you have a good amount of left overs for lunches and such during the week, & it saves a good amount of money! 

2. HGTV and Food Network

literally, when i watch tv this is what i'm watching. cause one day, i will have a house to remodel and a fabulous kitchen to cook in. so really i'm preparing for my future. its the smart thing to do.

my dream kitchen style is a cross between these two-ish 



3. painting

hubs and i have been painting up a storm in this house. we ran out of canvas so i painted a rock...it's serious. 


4. fall

i know it will never really be fall here in south florida but it does cool down quite a bit. i can't wait to wear my scarves and boots again, also i'm excited to not fry when i go outside.
